Healthy Dahi Appe


Healthy Dahi Appe (Substitute for fried dahi wada)
Today we are going to make dahi appe a healthy alternative to Dahi Wada.
What is Dahi Vada: It is Indian snacks item, starter or cold appetizer. Dahi vadas are lentil (split black gram without skin) based savory balls. These balls are deep fried and put in water, then served with cold thick beaten yogurt.
What is Appe: Appes are crisp round savory balls which is popular south Indian snacks.
Healthy Dahi Appe is a twist given to recipe of appe that my mother makes for breakfast along with coconut chutney. In this recipe we are not going to deep fry the vada’s and still have same taste. Let’s get started.
Ingredients:
  1. 1 cup urad dal (split black gram without skin)
  2. 1.5 cup roasted soji rawa (semolina)
  3. 1 big bowl curd (approximately 5 cups)
  4. 1 green chilly finely chopped
  5. 2-3 red chilies
  6. 1 teaspoon grated ginger
  7. 4-5 curry leaves
  8. Tablespoon of sugar
  9. ½ teaspoon mustard seeds
  10. 1 tablespoon ghee (clarified butter)
  11. Cumin powder, red chili powder and green coriander for garnishing
  12. Oil as required
  13. Salt as per taste
  14. Pinch of Hing (asafetida)
 
Method:
  1. Soak urad dal in water for 4-5 hours and grind it to fine paste by adding little water if required.
  2. Roast semolina for 5-7minutes on medium heat and let it cool down.
  3. Add roasted semolina into urad dal paste created in step 1. Add some water to this paste and mix well to make the batter.
  4. Keep aside the batter for 15-20 minutes. Semolina will absorb water so you may have to add additional water to get nice consistency.
  5. Add salt as per taste and let it get fermented for 8-10 hours in a warm place.
  6. After 10 hours check the batter it shall be double the size of what you kept before 10 hours. Now add some finely chopped chilies and mix it well.
  7. Heat appe pan and add some oil in appe pan. Now pour batter into pan with help of spoon and cover the pan with any lid.
  8. On a very low flame cook it for 10-12 minutes till it gets crispy texture and golden brown color.
  9. Then turn the appe to other side, let it cook for a minute and take the appe’s out of the pan.
Now let’s prepare curd
  1. Take curd and with help of whisk mix well till it gets smooth texture.
  2. Now heat ghee into a small pan and once it is hot add mustard seeds, grated ginger, red chilies, hing, curry leaves and mix well.
  3. Let it cool down then add ghee preparation (tadka) created in above step, sugar and salt into curd and mix well. Refrigerate curd for half an hour.
  4. Now in a platter take 5-6 appes and pour curd on it. Garnish it with cumin powder, red chili powder and finely chopped coriander and serve.
Preparation Tips:
  1. I prefer to make curd beforehand till appes get ready so I can have crispy appes with cold curd.
  2. You may also add all appes in the curd and refrigerate it if you like to have cold and soft dahi appes.
