Veg Delight Khichadi



This recipe is combination of variety of veggies, lots of lentils and small quantity of rice. I like this recipe because it tastes good and even if it has very less quantity of rice it gives a satisfaction to “rice lovers” that you had good amount of rice, especially when you are on diet :)
Let’s prepare my favorite dinner item Veg Delight Kichadi.
 
 
Ingredients:
The ingredients are for 3 serves.
1.       1cup chopped cauliflower
2.       1cup chopped onion
3.       1cup chopped carrot
4.       1cup chopped capsicum
5.       1 small cup Tur dal (Pigeon Split dal)
6.       1 small cup moog dal (green gram dal
7.       1 small cup masoor dal (Pink Lentil dal)
8.       ¾ small cup rice
9.       tablespoon oil
10.   1 teaspoon ghee (clarified butter)
11.   2-3 cloves
12.   5-6 black pepper
13.   2-3 dry red chilies
14.   Teaspoon of ginger garlic roughly chopped
15.   ½ teaspoon cumin seeds
16.   ¼ teaspoon of asafetida
17.   ½ teaspoon turmeric
18.   Teaspoon of lemon juice
19.   ¼ cup chopped green coriander
20.   Salt as per taste

Method:
1.       Wash all lentils and rice together and soak it in water(till you are ready with chopping of veggies)
2.       In a pan add ½ teaspoon of oil, and once it is hot add cloves, black pepper and red chilies and on a very low flame fry it for a minute.
3.       Take it out, let it cool down and in a mortar with pestle(khal batta) grind it roughly. This will give a unique flavor to khichadi.
4.       In a pan add two tablespoon of oil, once it is hot add asafetida, turmeric, cumin seeds, onion, ginger garlic paste and sauté it for 30 seconds. Now one by one add all vegetables, salt and masala (red chili, pepper and cloves). Sauté all veggies for minute.
5.       Now strain the water from lentils and rice. Add it to vegetables. Add more salt as per taste and mix it well.
 
6.       Boil 8-9 cups of water in a pan and once it starts boiling add same to vegetables and lentils preparation.
7.       Cover it and cook it on a low flame for 25-30 minutes. Check in-between if it needs more water.
8.       I don’t like to cook it in the pressure cooker, but you can cook same in pressure cooker.
9.       Once it is almost ready add ghee (clarified butter) and lemon juice to it and mix well.
10.   Garnish it with fresh coriander and serve with Pickle or papad.

Preparation tips:
1.       You can use any vegetable of your like.
2.       I use all three types of lentils (masoor, moong and Toor). You may use any one or two type of lentil or sprouts instead of moong dal.
